The night of “Sant Joan” is a magical night in Catalunya, and each city / town celebrates in a different way, but all have in common:
- gatherings with family / neighbour / friends,
- sharing together a delicious “Coca de Sant Joan”
- throwing firecrackers
- or lighting a fire,
because it is a pagan celebration of worship the sun, the summer solstice, that the days are longer …
Today we leave the traditional recipe of “Coca de Sant Joan” so that you can make at home, but if you do not have time, you can also can try ours in “ART i SA” is delicious!
- 250 g – bread flour
- 55 g – Sugar
- 55 g – Butter
- 2 – Eggs
- 20 g – fresh yeast
- 75 g – Milk
- 1 – cinnamon stick
- 1/2 – grated lemon skin
- 25 g – Pine nuts
- 200 g – Candied fruits (melon, orange, cherry, …)
- 1/2 cup – Anise
Undo the yeast with some warm milk
Add 3 tablespoons flour and work it to make a smooth dough.
Let stand until doubled in volume.
Make a volcano on the work area with flour and put in the center the butter, eggs, sugar, salt, lemon zest and anise.
Begin mixing the ingredients of the medium with your hands or a fork, add the sourdough and continue working it with flour to a fine and compact mass.
Roll out the dough on a baking sheet greased with oil or butter, giving a thickness of about 1 cm and oval shape.
Brush the top of the dough with egg and put the candied fruits.
Let stand until doubled in size.
Over the dough put the pine nuts.
Sprinkle with sugar on top.
Bake at 180 degrees for 20 minutes.
